Garlic and Chilli Cod

Hi guys,

Hope you’re having a great start to 2019! With the workload of university, I’ve started make quick meals which are still tasty and made from scratch. I thought it would be great to have my next few posts focus on this!

I’m starting with Garlic & Chilli Cod, served with potato wedges and spinach -it can be made in under 30 minutes, has so little prep work and tastes amazing. I hope you like it!

 

Ingredients:

  • 2 cod fillets
  • 3 large potatoes
  • 250g spinach
  • a pinch of chilli flakes (or fresh chilli if desired)
  • 2 cloves garlic
  • 1tbsp butter
  • A pinch of paprika

 

Method:

  1. Preheat the oven to 200 degrees / 180 fan
  2. Place the cod fillets on a baking tray, skin side down, and then sprinkle over the chilli flakes and garlic (crushed and finely chopped)
  3. Add the butter to the top of the fish
  4. Cut the potatoes into wedge shapes, and boil for 10 minutes
  5. Strain the potatoes and dry, then cover lightly in oil and paprika
  6. Add the wedges to the baking tray, and then put in the oven for 25 minutes, turning the wedges halfway through2ddb3574-239d-4950-ad19-cf84fb133144
  7. While serving the fish and potato, wilt the spinach by microwaving for approximately 1 minute
  8. Enjoy!

 

Tips

  • Baste the cod with the melted butter regularly, and cover the tray with baking parchment, to stop the fish from drying out
  • Add a slice of lemon to each cod fillet in step 2 to add a citrus flavour to the fish
